Heat warning: Olé Reaper is made with Carolina Reaper, one of the world's hottest chillies. Start with less than the recipe says and add more to taste.
Ingredients
- 16 frozen dumplings
- 1 tbsp oil
- ⅓ cup water
- 3 tbsp soy sauce
- 1 tbsp rice or black vinegar
- 1 tsp sesame oil
- ¼–½ tsp The Flavorsmith Olé Carolina Reaper Sriracha
- Sliced spring onion
Method
- Heat the oil in a non-stick pan over medium-high heat. Fry the dumplings flat-side down for 2 minutes until golden.
- Add the water, cover immediately and steam 5–6 minutes, until the water has gone.
- Uncover and fry 1 minute more to re-crisp.
- Mix the soy sauce, vinegar, sesame oil, spring onion and ¼ tsp Olé Reaper. Taste and adjust.
- Serve the dumplings with the dip.
Chef's tip: Make two dips — one with Reaper, one without — when serving a crowd.
