Crispy oven fries with a creamy, garlicky, dangerously hot Olé Reaper mayo.
Serves: 4 | Prep: 10 min | Cook: 35 min
Heat warning: Olé Reaper is made with Carolina Reaper, one of the world's hottest chillies. Start with less than the recipe says and add more to taste.
Ingredients
- 1 kg floury potatoes (such as Agria), cut into 1 cm fries
- 2 tbsp oil
- 1 tsp salt
- ½ cup mayonnaise
- 1 small clove garlic, grated
- 1 tsp lemon juice
- ½–1 tsp The Flavorsmith Olé Carolina Reaper Sriracha
Method
- Heat the oven to 220°C. Soak the fries in cold water for 10 minutes, then drain and dry very well.
- Toss with oil and salt. Spread on two lined trays in a single layer.
- Bake 30–35 minutes, turning once, until golden and crisp.
- Mix the mayonnaise, garlic, lemon juice and ½ tsp Olé Reaper. Taste and add more carefully.
- Serve the fries hot with the Reaper mayo.
Chef's tip: The soak removes surface starch, which is what makes oven fries crisp instead of limp.
