Sweet-savoury beef mince over rice with quick cucumber, a fried egg and a drizzle of Olé sriracha. Fifteen-minute dinner.
Serves: 4 | Prep: 5 min | Cook: 12 min
Ingredients
- 500 g beef mince
- 3 cloves garlic, chopped
- 1 tbsp grated ginger
- ¼ cup soy sauce
- 2 tbsp brown sugar
- 1 tsp sesame oil
- 3 tbsp The Flavorsmith Olé Sriracha
- 4 cups cooked rice
- 1 cucumber, sliced and tossed with 1 tbsp rice vinegar
- 4 fried eggs
- Spring onion and sesame seeds
Method
- Brown the mince in a hot pan, breaking it up. Pour off excess fat.
- Add the garlic and ginger for 1 minute.
- Stir in the soy sauce, sugar, sesame oil and 1 tbsp Olé. Simmer 2 minutes until glossy.
- Divide the rice between bowls. Top with beef, cucumber and a fried egg.
- Drizzle with the rest of the Olé and finish with spring onion and sesame seeds.
Chef's tip: Let the mince brown properly before stirring — the crispy bits carry the flavour.
