Crispy wings in a buttery Olé Carolina Reaper Sriracha sauce. For serious heat lovers only.
Serves: 4 | Prep: 10 min | Cook: 45 min
Heat warning: Olé Reaper is made with Carolina Reaper, one of the world's hottest chillies. Start with less than the recipe says and add more to taste.
Ingredients
- 1 kg chicken wing nibbles
- 1 tbsp baking powder (gluten-free if needed)
- 1 tsp salt
- 40 g butter
- 1–2 tsp The Flavorsmith Olé Carolina Reaper Sriracha
- 2 tbsp honey
- 1 tbsp apple cider vinegar
- Blue cheese or ranch dip and celery sticks, to serve
Method
- Heat the oven to 220°C. Set a wire rack over a lined tray.
- Pat the wings very dry and toss with baking powder and salt.
- Bake on the rack 40–45 minutes, turning halfway, until crisp (75°C inside).
- Melt the butter and stir in the honey, vinegar and 1 tsp Olé Reaper. Taste carefully and add more if you dare.
- Toss the wings in the sauce. Serve with a cooling dip and celery.
Chef's tip: Wash your hands after handling the sauce, and keep a glass of milk nearby — dairy tames the burn better than water.
