A rich, spicy miso ramen with pork, corn and a soft egg, cranked up with Olé Carolina Reaper Sriracha.
Serves: 2 | Prep: 10 min | Cook: 15 min
Heat warning: Olé Reaper is made with Carolina Reaper, one of the world's hottest chillies. Start with less than the recipe says and add more to taste.
Ingredients
- 2 eggs
- 1 tbsp oil
- 200 g pork mince
- 2 cloves garlic, chopped
- 1 tsp grated ginger
- 2 tbsp white miso
- 4 cups chicken stock
- 1 tbsp soy sauce
- ½–1 tsp The Flavorsmith Olé Carolina Reaper Sriracha
- 2 portions ramen noodles
- ½ cup corn kernels, spring onion and nori
Method
- Boil the eggs 6½ minutes, cool in iced water and peel.
- Fry the pork in the oil until browned and crispy. Add the garlic and ginger for 1 minute.
- Whisk the miso into a little stock, then add to the pot with the rest of the stock and the soy sauce. Simmer 5 minutes.
- Stir in ½ tsp Olé Reaper, taste, and add more if you like.
- Cook the noodles, drain and divide between bowls. Ladle over the broth and pork, then top with a halved egg, corn, spring onion and nori.
Chef's tip: Don't boil the broth once the miso is in — it dulls the flavour.
