Heat warning: Olé Reaper is made with Carolina Reaper, one of the world's hottest chillies. Start with less than the recipe says and add more to taste.
Ingredients
- 500 g beef mince (20% fat)
- Salt and pepper
- 8 slices cheddar
- 4 burger buns, toasted
- ⅓ cup mayonnaise
- 1 tbsp tomato sauce
- 1 tbsp chopped pickles
- ½–1 tsp The Flavorsmith Olé Carolina Reaper Sriracha
- Sliced pickled jalapeños, onion and lettuce
Method
- Mix the mayonnaise, tomato sauce, pickles and ½ tsp Olé Reaper. Taste and adjust.
- Roll the mince into 8 loose balls.
- On a very hot pan or plate, smash each ball flat and season. Cook 2 minutes until crusty.
- Flip, add a slice of cheese and cook 1 minute.
- Stack two patties per bun with Reaper sauce, jalapeños, onion and lettuce.
Chef's tip: Use a sturdy metal spatula and press hard for 10 seconds — that's the crust.
